The Effects of Hydrogenation on Soybean Oil
نویسنده
چکیده
Soybeans are very versatile, both as a food product and an ingredient in many industrial products. The oil produced by soybeans is contained within many foods we eat every day. Natural soybean oil contains several essential fatty acids that our body needs to work prop‐ erly, including linoleic and linolenic acids. However, much of the soybean oil consumed in many parts of the world has been partially hydrogenated; that is, it's chemical composition has been changed. This hydrogenation removes the necessary essential fatty acids contained within the original oil. Some of the partially hydrogenated soybean oil has been converted to trans fatty acids.

Storage Stability of Soybean Oil-Based Salad Dressings: Effects of Antioxidants and Hydrogenation
Flavor deterioration of salad dressings was investigated to determine the effect of hydrogenation of the oil. additives and storage conditions. Flavor quality tests were developed and correlated with gas chromatographic analyses of volatile compounds in oils separated from the dressings. Hydrogenation of soybean oil with copper and nickel catalysts effectively increased the storage stability of...
متن کاملCopper-Hydrogenated Soybean and Linseed Oils: Composition, Organoleptic Quality and Oxidative Stability'
Copper and nickel hydrogenations give a wide distribution of double bonds in the monoene fraction from both reduced soybean and linseed oils. With copper catalysts, high pressure hydrogenation reduces the extent of this double bond distribution when compared with low pressure hydrogenation. With nickel catalysts, some t.17-octadecenoate is formed but less than with a copper catalyst. In room od...

Soybean lecithin containing a mixture of phospholipids (PLs) is an important co product obtained during soybean oil refining. Saturated rich PLs find several applications in food, cosmetic and pharmaceutical areas. The present study reports a simple, rapid, efficient and continuous hydrogenation process using 10% Pd/C catalyst at various temperatures and pressures. Degree of hydrogenation was m...

Headspace gas chromatographic analysis of heated soybean oil was investigated as a tool to determine what effect hydrogenation and additives have on the formation of total and individual volatile components. Soybean oil was hydrogenated to varying linolenate (Ln) contents with either nickel (Ni) or copper catalysts. Oils were stabilized with citric acid (CA) or a combination of CA with tertiary...
متن کاملEffects of Hydrogenation and Additives on Cooking Oil Performance of Soybean Oil
Soybean oil was continuously hydrogenated in a slurry system to investigate the effects of linolenate content and additives on cooking oil performance. Room odor evaluations carried out on oils heated to 190 C after frying bread cubes showed that the oils hydrogenated with Cu catalyst to 2.4% linolenate (Cu-2.4) and with Ni catalyst to 4.6 linolenate (Ni-4.6) had a significantly lower odor inte...
